Another good day in the oven after a pitiful week on the bike. Crunchy baguettes and for a change of pace, some tall thin “French Financiers”. The financiers are something like a muffin but a nice crisp finish and loaded with the subtle sweetness of almond flour – yes of course it’s homemade almond flour! The weather here in Dayton, or should I say the weather forecasts, are jumping all over the place which plays hell with my one’s psyche. Still, time to buck up! I can’t afford another sub 100 mile disaster like last week!
